Summer has arrived, and with it, the opportunity to create a new special tasting menu for this hot season that allows us to create unforgettable memories with our loved ones.

This year, our summer menu is a true celebration of flavors inspired by the memories, distinctive characteristics, and vibrant sensations of this special season full of warm colors and long days.

In creating it, we seek to convey the essence of summer in every dish. We want our diners to be able to feel the warmth of the sun, the brightness of the sunsets and the energy that permeates the atmosphere. That is why we decided to play with a monochrome of warm colors in each presentation. Each dish is a work of art in which the shades of color intertwine harmoniously, creating a visually captivating experience.

A Tribute to Summer Gastronomic Memories
Summer is intrinsically linked to family and childhood vacations, so we sought to capture those special moments in our menu. To achieve this, we invited four prominent chefs, each with their own nostalgic gastronomic memories of summer. Thanks to the collaboration of chefs Mane Rivera, José Carlos Ruiz, Alex Cabral and Uriel Romero, we have created a unique fusion of culinary stories.

Each dish on the menu is steeped in these memories, carefully adapted and integrated to offer an exceptional dining experience.

Seafood Delicacies and Authentic Mexican Products
In our summer menu, seafood takes center stage. Summer is an ideal season to enjoy the vast fresh flavors that Mexico’s seas offer, so we have carefully selected original ingredients and authentic culinary techniques to highlight the unique flavors of our country.

For example, we have tamales from Mazatlán, which are very traditional in that area. In this menu, one of the techniques we have included is the “sorrasca”, which is a planting process where the old leaves are burned and a bonfire is shared at the end of the harvest.

Each preparation and culinary process has been developed in our R&D, our gastronomic research and development area in Balcón del Zócalo.

The culinary sensations of our summer menu are complemented by the work we do with our “Ruido de Sala” project, in which we give value to the joint work of waiters, captains, sommeliers, and all the staff working on the floor. We professionalize and empower each one of the tasks to offer an extraordinary gastronomic experience from beginning to end.
